Happy Weekend everyone. It’s amazing how much you can get done when someone wakes you up before 6am on a Sunday morning…
I prepped lots of veggies and cooked off some chicken breast in the crock pot yesterday, perfect way to start the week. I plan on making some dishes today to last throughout the week, as well as share our weekly meal plan. What are you making this week?
Sunday: Iron Man Salad with Bacon, Edamame, Peppers and Almonds
- Made White Chicken Chili and grain medley (quinoa, millet, brown rice, farro)
- Chopped bell peppers, celery, cucumbers for snacking
- Chopped kale, fennel, celery and made dressing for Kale Market Salad (part of lunch for the week)
Monday: Beef Fajita Salad + Pineapple Jalapeno salsa
Tuesday: Ground Pork Lettuce Wraps + Thai Papaya Salad (Som Tam)
Thursday: Lemon Arugula Pasta (or grain medley) with grilled Shrimp
Friday: Friend’s House

I was inspired by my brother-in-law to go Vegan once a week for lent (and maybe vegetarian once a week after that?). After watching the documentary Vegucated, he has been eating vegan for the last two weeks, and his cholesterol is dropping. If he can do it, I know hubby and I can give it a try. Thinking of starting with a black bean burger or tofu stir fry…
