Quinoa Quiche

This has become my staple snack to take to work or to munch on before dinner.  Nothing like nutty quinoa and your favorite ingredients to tide you over! I make a batch Sunday afternoon and it lasts me for the week.  I love this dish because of its versatility, hardly a recipe at all.  I must give credit to IowaGirl, as her quinoa cups were my inspiration.

Into a medium bowl add,

  • 3 whole eggs
  • 2 egg whites
  • 1/2 cup diced deli meat (ham or turkey)
  • 1/2 cup shredded cheese
  • 2 big handfuls chopped spinach
  • 3 spoonfuls of  your favorite salsa
  • salt and pepper & any southwest seasoning
  • 5-6 dashes hot sauce

Combine together and add 2 cups of cooked & cooled quinoa (about 3/4 cups raw quinoa)

Mix well, add to a greased 9×9 dish and bake for about 25 minutes at 350 degrees, till the top is firm and the sides brown and pull away from the sides.

Feel free to add any of your favorite flavors.  IowaGirls uses 1 cup shredded zucchini for her vegetable, instead of spinach.  Maybe a Greek inspired twist would be nice with feta cheese, chopped olives and chicken meat? or perhaps mushrooms and Swiss cheese? Or for a holiday morning, use crumbled sausage and chopped bell peppers..The possibilities are endless..
